My mom just sent in this recipe. Posting it as is without corrections...

Masala omlette

Ingredients
Eggs----4
Tomato pieces -2 tabspoons
Onion pieces-2tab spoons
Greenchili pieces-1\2 t spoon
Chopped coriander leaves—1\2 tspoon
Garam masala powder—1\2 spoon
Salt to taste
Ghee or oil—2tspoons

Procedure
Beat eggs with onion,tomato,green chilly pieces,coriander leaves and salt.
Add garam masala powder and beat lightly.
Drop little oil or ghee in a frying pan , pour the egg mixture and keep on a slow flame. Turn it on to the other side. Let it cook for 2 mts and serve with tomato sauce.

Cauliflower Korma recipe

Posting another of mom's cauliflower recipes. This is one of my favorites...

Cauliflower kurma
Ingredients

Cauli Flower-1
Tomato pieces—1cup
Onion paste - 1 cup
Garlic paste-1 tabspoon
Ginger paste-1tspoon
Greenchili paste-1tspoon
Turmeric powder-1\2tspoon
Coriander powder-1tspoon
Cloves---3or4
Cinnamonsticks small pieces-3or4
Cardamom [cruhed] -3
Dry coconut powder—1\4cup
Coriander leaves[chopped]-1 tabsp
Oil-required
Salt to taste
Lemonjuice—1\2 tspoon

Procedure

Cut the cauli flower into small florets. And wash well.
Take oil in a frying pan , add cloves, cardamom, cinnamon pieces when they split, add onion paste and fry well until becomes brown. Add tomato pieces, florets, turmeric powder and salt.
Add little water and boil for 5 mts. Add garlic, ginger paste, chili paste and cook for some time, add coconut powder , coriander powder and simmer for 3or 4 mts. Lastly add lemon juice before removing the flame. Garnish with coriander leaves. Option---To get thick gravy take 1\2sp cornflour mix with little water, and add to the gravy and simmer for 2or3 mts.
