The Concoction
Pesarattu is a dosa (pancake) from the southern state of India called Andhra Pradesh. It is easy to make and unlike the traditional dosa, it does not take as much preparation time.

| Moong Dal |
1 Cup |
| Rice |
Quarter Cup |
| Ginger |
1 inch cube |
| Green chillis (hot peppers) |
2 hot or 4 mild |
| Red Onions |
2 medium |
| Cooking soda |
1 pinch |
| Salt |
To taste |
| Oil |
Small bowl |

Abracadabra steps
| Step |
Time/Trigger |
| Soak mix of Moong Dal and Rice |
2.5 hours |
| Wash the mix |
|
| Grind the mix with Ginger, chillies, little water |
Until fine paste |
| Add salt to taste and a pinch of cooking soda |

| Chop onions finely |
5 minutes |
| Fry onions in a tablespoon or two of oil |
Until onions become cooked and translucent |
| Keep onions aside |
|
| Heat a non-stick flat pan using medium heat |
Until desired temperature |
| Apply a light coat of oil |
|
| Make thin attus (pancakes). Scoop some dough on to the pan. Spread the dough evenly using the spatula in a spiral fashion going from the center to the outside |

| Flip the attu |
Until desired crispness |
| Spread a thin layer of onions; fold in half and serve |

Magician's Notes
Pesarattu is quite nutritious since its main ingredient is Moong Dal. However, you may want to be a little strict with the amount of oil you use to "touch up" the attu. |
